This is a special salami, with an “old-fashioned” flavour, different from the taste of the other
salamis we produce.
In fact, although the marinade is the same, be it the guts in which it is packed, which are fatty and keep it softer for a longer time, or be it the grinding of the meats, which is done by hand using the tip of the knife so that some of the meat may be cut into larger chunks, its flavour is truly different from the others and, according to the older connoisseurs, it brings to mind the salamis of the past.
